Tomato Gin Soup

Dine in Whistler- Fairmont Chateau Whistler Recipe - Tomato Gin Soup


2 tbsp olive oil
200g chopped onion
200g chopped celery
200g chopped shallot
2 cloves garlic
2 tbsp tomato paste
500mL ripe local tomatoes
200mL chicken stock or sub. mushroom stock
1 sprig thyme
60mL Schramm gin
100g bacon lardon or sub. tempeh bacon
100g sautéed BC mushroom
kosher salt and pepper to taste

Fairmont Chateau Whistler Recipe - Tomato Gin Soup


Sauté the onion, celeriac, shallot and garlic in the olive oil adding the tomato paste after the vegetables are soft.

Combine the tomato, chicken stock, thyme sprig and salt. Cook to a simmer until the vegetables are tender.

Remove the thyme and blend in a blender until smooth. Season to taste with the salt and pepper.

To serve, sauté the bacon and mushroom, flambéing with the gin and finish with the puréed soup.
